You will be involved in a 4-years research project related to the valorization of plant-based by-products. In this PhD-research you will release bioactive compounds (eg phenolic compounds) from the matrix using enzymatic and/or fermentative pretreatments. The obtained extracts needs to be characterized based on the phenolic compounds present. Furthermore, the extracts will be tested towards their bio-activity potential e.g. ACE-inhibitory activity, anti-obesitiy activity, using both in vitro and in vivo systems. Results of this PhD-study can lead to development of new bio-active extracts, which could be applied to develop functional foods.
