Carbohydrates, an important class of natural products, play a wide range of key roles in complex biological processes involving specific events in vital cellular recognition processes, carbohydrate-protein interactions, and targeting of hormones, antibodies, pathogenic toxins and microorganisms. Moreover, they can form a huge number of branching complex structures because of their structural diversity in terms of functional groups, ring size and linkages.
